Shepherd's Pie

As the days cool down, this traditional favourite is sure to warm you up.  Enjoy.


Ingredients

The MEEZ:

  • 1 lb beef, ground
  • 1 medium onion, chopped
  • 3 Tbsp butter
  • 3 cloves garlic, minced
  • 1 tsp flour
  • 1 1/4 cup beef stock
  • 1 Tbsp fresh rosemary, minced
  • salt & pepper
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn

For the Potatoe Topping:

  • 2 lbs potatoes, peeled
  • 1 cup milk
  • 3 Tbsp butter
  • salt & pepper

Directions

The METHOD:

  1. Preheat oven to 375F.
  2. Brown ground beef in a pan over medium high temperature, then remove and set aside.
  3. In the same pan, melt butter.
  4. Cook the chopped onions in the melted butter until soft.
  5. Add ground beef and minced garlic back to the pan and stir well.
  6. Sprinkle mixture with flour (or cornstarch) and stir again while adding the beef stock & rosemary.
  7. Let the mixture bubble to a rich sauce.
  8. Add the peas and corn.
  9. Add salt & pepper to taste.
  10. Meanwhile, boil the potatoes.
  11. Once tender, drain the potatoes and mash them with the additional milk and butter.
  12. Season mashed potatoes with salt and pepper.
  13. Spread the meat mixture over the bottom of a shallow baking dish.
  14. Spread or pipe the mashed potatoes on top of the meat mixture.
  15. Bake the pie until the fillings are bubbling and the potato mixture is brown around the edges (about 20 minutes).
  16. Let your Shepherd's Pie stand for 10 minutes before serving.
