Pecan Cinnamon Buns

Overview

There is nothing yummier than a sweet sticky cinnamon bun for breakfast or for a break in your day.  

I hope you enjoy this gooey treat.


Ingredients

Dough

1/2 cup             warm water

1/2 cup             milk

1 Tb                 dry yeast

2/3 cup             sugar

1/2 cup             unsalted butter, room temperature

1 1/4 tsp           salt

2 large              eggs

4 1/4 cups         all purpose flour


Glaze

1 1/2cups             golden brown sugar

1 cup                   unsalted butter, room temperature

1/2 cup                honey

1/2 cup                dark corn syrup

1/2 cup                water

1 Tb              ground cinnamon

2 cups                  pecan halves


Directions

Dough:
Mix warm water, yeast, and pinch of sugar in small bowl. Let stand until foamy, about 5 minutes.

In a mixer, beat sugar, butter, and salt until well blended. Beat in eggs one at a time. Mix in milk & yeast mixture, then 3 cups flour, one cup at a time. Sprinkle the remaining flour into the mixer, 1/4 cup of at a time and knead until smooth and elastic, adding more flour if sticky, about 8 minutes. 

Butter another large bowl. Add dough; turn to coat. Cover bowl with plastic wrap and let dough rise in warm area until doubled, about 2 1/2 hours.

Glaze:
Beat brown sugar, butter, honey, corn syrup, ground cinnamon and water in medium bowl to blend.

Build:

Punch down dough. Divide dough in four.  Roll each dough piece out on floured work surface into a rectangle. Brush any excess flour off dough.

Spread half of the remaining glaze over dough rectangles, dividing equally. Starting at 1 long side, tightly roll up each rectangle into log. Cut each log into rounds. Place rounds, cut side down, on a parchment covered baking sheet, spacing evenly. Cover with plastic wrap. (Can be made 1 day ahead; refrigerate.) Let buns rise in warm area until almost doubled, about 1 hour.

Preheat oven to 375°F. Bake buns until deep golden brown, about 20 minutes. Turn hot buns out onto platter. Cool about 30 minutes and serve.

Heat the remaining butter mixture on a stove add toasted pecans and just before serving pour over top.
