Low Fat Mushroom Soup

Overview

Here's a delicous soup to warm your soul while you stay dedicated to the At Home Health Challenge this year!


Ingredients
  • 2 Tbsp olive oil                                               
  • 1 onion, diced                                        
  • 1 lb portabello mushrooms, sliced
  • 1 lb shitake, sliced                                    
  • 2 Tbsp flour
  • 1/4 cup sherry
  • 3 cups 1 % Milk
  • 3 cup chicken stock                                                 
  • 2 bay leaves                                                      
  • 1 – 2 Tbsp thyme
  • ½  cup half and half cream    
  • salt and pepper

Directions
  1. In a heavy-bottomed pan heat the olive oil.
  2. Add the onion and sauté at a high heat for about 5 minutes.
  3. Continue to sauté, stirring occasionally, add mushrooms and cook for 5 – 10 minutes, until they are golden. 
  4. Add the flour and stir in well.
  5. Add sherry and bring to a boil.
  6. Add chicken stock, milk, bay leaves and thyme and simmer for at least 30 minutes to allow the flavours to mellow.
  7. Add the half & half and season with salt & pepper.
