Judy Wood's Bacon & Egg Cheddar French Toast

Overview

I created my version of French toast for my Dad who is a big bacon lover.  I used bread made by Aviv Fried of Sidewalk Citizen Bakery .  It is an organic sourdough made with local organic wheat.  It is amazing and you can get it fresh at Meez on Friday & Saturday and we also have it frozen.  It is delicious toasted.


Ingredients

4-6 large         eggs

1/2 cup           whipping cream

1 tsp               vanilla

1/4 tsp            salt

8                    bread, sliced

8                    bacon, sliced & cooked

2 oz                aged cheddar cheese

2 Tb                unsalted butter

½ cup              maple syrup


Directions

Whisk together eggs, cream, and vanilla, and pour the mixture into a large shallow pan.

Slice the cheese and then place the cheese & bacon on the inside of the bread.

Immerse the sandwich in the liquid and let them soak for a few minutes, then flip them over and soak them for another minute.

Melt 2 tablespoons of butter in a large skillet over medium heat. Cook the sandwiches, until golden on both sides, adding more butter as necessary.

Garnish with strawberries & drizzle with maple syrup.
