French Onion Garlic Dip with Pita Chips

Overview

This is the recipe Chef Judy was going to make on Global's Saturday Morning News the day before Super Bowl.  She was unable to be in the studio Saturday morning, but she still wanted all of you to have the recipe.  Enjoy!


Ingredients

The 'Meez':

  • 2 large             sweet onions, peeled and diced
  • 1 Tb                 olive oil
  • 1 tsp                salt, divided
  • 1 whole            garlic head
  • 1/3 cup            low-fat sour cream
  • 1/3 cup            low-fat cottage cheese
  • 2                      green onions, sliced
  • 1/4 cup            fresh parsley, chopped
  • 1 Tb                 fresh lemon juice

 For the Pita Chips:

  • 1 pkg               pita bread
  • 2 Tb                 olive oil
  • 1 tsp                salt
  • ½ tsp               pepper
  • 1 tsp                thyme

Directions

The 'Method':

  1. Preheat oven to 425°.
  2. Place a teaspoon of olive oil into a fry pan and heat. 
  3. Add the onions and cook for 20-30 minutes or until golden. 
  4. Take a whole head of garlic and trim off the top then wrap in foil and place into a 425° oven for about 30 minutes - 1 hour.
  5. Cool garlic for approximately 10 minutes. 
  6. Squeeze the garlic pulp out of the skins and discard skins.
  7. Combine onion, garlic, 1/2 teaspoon salt, sour cream, cottage cheese, and remaining ingredients in a large bowl.
  8. Taste for seasoning, then cover and chill 1 hour.
  9. Take the pita bread and brush the whole top with olive oil and the sprinkle with salt, pepper and thyme.  
  10. Cut into small wedges and place onto the baking sheet. 
  11. Bake for about 10 minutes or until golden.
