Breakfast Flatbread

Overview

Pizza for breakfast - what could be better than that?  If you missed Chef Judy on Saturday morning, do not fear, we have a link to the video so that you can watch and learn.


Ingredients
  • 1 recipe           Pizza Dough
  • 2 tsp.               Olive Oil
  • to taste            Sea Salt & Freshly Ground Black Pepper
  • 1                      red skinned potato, thinly sliced
  • 1                      tomato, sliced
  • 4 oz.                bacon
  • 4 oz.                aged cheddar
  • for sprinkling   Cornmeal
  • 1                      Green Onion, slivered

Directions
  1. Pre heat the oven to 450. 
  2. Roll out the pizza dough until quite thin. 
  3. Brush the top surface of each round with olive oil and sprinkle with salt & pepper. 
  4. Place the pizza dough in a 400 degree oven and pre cook the dough for about 5 minutes, lightly golden.
  5. Thinly slice the potato, then toss in oil salt & pepper.
  6. Place into a fry pan or on a baking sheet with a small amount of butter if desired.
  7. Cook until golden.
  8. Pre cook the bacon.
  9. On the pre cooked pizza dough, layer the cooked potatoes, tomatoes, bacon then finish with the cheese.
  10. Bake on a baking sheet until the pizza is browned, about 5 minutes. 
  11. Garnish it the slivers of green onion when it comes out of the oven.
