Watermelon Fennel Salad

Overview

I hope you enjoy this refreshing watermelon and fennel salad.  It was inspired by one of my favourite Chefs, Todd English.


Ingredients

Saturday Chef Judy Wood’s

 Watermelon & Fennel Salad – inspired by Tod English

Serve: 4 – 6

4 cups           watermelon, cubed

1 small          red onion, sliced

3 – 4             green onions, sliced

2 cups           feta, crumbled

1 cup            olives, coarsely chopped

2 small          fennel bulbs, thinly sliced

1                  red pepper, sliced

1                  yellow pepper, sliced

¼ cup           fresh basil, chopped

1/8 cup         fresh mint, chopped

2 Tb             balsamic vinegar

1                  lemon, juiced

drizzle of olive oil

salt & pepper to taste

 

 


Directions

Place all the ingredients in a bowl and toss together. 

Drizzle the olive oil and add the salt & pepper.

Toss well and taste to see if you need more olive oil.
